What Is Ruby Chocolate?
Ruby chocolate is presented as the fourth type of chocolate, alongside dark, milk, and white chocolate. It was officially introduced in 2017 by Barry Callebaut, a large industrial chocolate manufacturer based in Switzerland.
It’s made from a specific variety of cocoa beans called “ruby beans,” and is known for its natural pink color, said to be achieved without added colorants or flavorings. Its flavor is described as fruity and slightly tart, with notes that resemble berries.
An Innovation with Strict Controls
It’s important to understand that ruby chocolate is a patented product, developed and marketed exclusively by Callebaut. The process behind it is proprietary, and access to the product is restricted. This makes it very different from craft or independently produced chocolate, as it cannot be made or modified outside of this controlled system.
Why Exquisito Chocolate Doesn’t Make Ruby Chocolate
